There are many resources available within the Galaxy of Stars Reach. We curerntly know that minerals and plants are harvestable.

Resources will have quality variation and can be fully exhausted from a zone or planet.

Gutting an entire planet of resources is rumored to require a "pretty serious sustained effort over a length of time".
